“Sixteen-hour post-oak brisket on the Delmar Loop.”
The Delmar original of a growing local group, Salt + Smoke pairs a modern bar and a deep bourbon list with a genuinely excellent smoke program. The housemade bacon is worth an order on its own.
Salt + Smoke brought a serious, Texas-influenced brisket program to the Loop — sixteen hours over post oak — alongside St. Louis-cut ribs and its cult cherry-smoked wings.
Regulars point to Post-Oak Brisket, St. Louis-Cut Ribs, Cherry-Smoked Wings, and Housemade Bacon.
Salt + Smoke is mid-range ($$).
Salt + Smoke serves St. Louis barbecue — St. Louis barbecue is its own animal, built on the pork steak, the crispy pork snoot, and the St. Louis-cut spare rib, finished with a sweet, sticky, tomato-based sauce. The tradition leans closer to grilling and long backyard smokes than to the all-day pit cooking of Texas, and it carries a deep soul-food lineage on the city's North Side.
