Wolfepack is Jared Wolfe's Columbus Park smokehouse, grown from pop-ups at Callsign Brewing into a proper restaurant on Fifth Street. It's part of Kansas City's new wave of craft barbecue—small-scale, live-fire, and cooking with the care of the modern pit generation rather than leaning on an old chain playbook. The pits burn oak and hickory, and it shows in the sliced brisket and pulled pork, both carrying the clean, deliberate finish that puts Wolfepack in the same conversation as the likes of Q39 and Jack Stack, just at a fraction of the scale. Smoked turkey breast and pork ribs fill out a small, craft-minded board. It's also the anchor of a small-business strip still making its name, a young pit betting that careful live-fire cooking will speak louder than square footage. On the evidence of the brisket, that bet is paying off.
